This is a pretty easy and unique meal that we have from time to time. I am a big fan of Tex-Mex meals so it’s a favorite of mine.
Ingredients:
1 pound ground beef (or ground turkey)
1 jar thick and chunky salsa (16 ounce)
1 package of cornbread mix (8 1/2 ounce)
1 1/2 cups shredded Cheddar Cheese (I buy the Mexican blend shredded cheese)
1/2 cup sliced olives (we don’t eat olives so I’ve never put these in ours)
Instructions:
- In a skillet, brown ground beef; drain fat.
- Add 1 1/2 cups salsa and bring to a boil.
- Reduce heat and simmer until liquid is reduced (about 5 minutes or so).
- While mixture is simmering, mix together cornbread mix according to package directions.
- Mix in 1 cup of cheese and the olives.
- Pour mixture ino an 8 x 8 inch greased baking dish.
- Spoon hamburger into center of cornbread mixture, leaving a 1 inch border of cornbread mixture showing on the sides.
- Bake in a preheated oven at 400 degrees for approximately 20 minutes.
- Top with any remaining cheese and salsa and return to oven until cheese is melted
