Sugar Cookies – Not Sweet & Sticky :-(

Cameron found an owl cookie cutter while we were out one day and wanted to make Owl Cookies for her class (our mascot is the owl).  Since tomorrow is the closest school day before Halloween, I told her we would make them tonight.  I decided that sugar cookies ought to be easy enough without buying a premade mix so away we went.

Final product – they were sticky (even though my recipe specifically said it was for rolled out cookies).  I had no choice but to add more flour.  Maybe that caused the second problem – they aren’t sweet.  So our Owl Cookies are now shortbread cookies says my grandmother – that way people won’t expect them to be sweet.

*sigh*  I love to cook “real food,” but hate desserts!

Tasty Thursday: Easy Stew

This is a recipe that doesn’t take any time at all to get started in the morning when you do not want to take much time out of your daily schedule. And it’s tasty in the evening when you get home from work so I thought it would be perfect for this week’s Tasty Thursday post.  While it does cook for quite a while (6 to 8 hours), it is fast to fix before you head out for work in the mornings and fast to put in bowls for dinner when you arrive home.  It’s one of my favorite winter meals.  Hope you enjoy.

Ingredients:

  • 1 lb. boneless stew meat (cut up)
  • 1 Can Cream of Mushroom Soup (10 3/4 oz)
  • 3 Potatoes (Cut up and Cubed)
  • 2 Carrots (Diced – I just chunk some baby carrots in there)
  • 1 Chopped Onion (Optional, we don’t put this on ours)
  • 2 Cups Water

Directions:

  1. Brown the stew meat on all sides.
  2. Place meat in the slow cooker.
  3. Add all the remaining ingredients.
  4. Stir well.
  5. Cover and cook on low for 6 to 8 hours.
  6. Stir Occasionally (I don’t do usually get to do this since I’m at work and it turns out fine.)

This is one of my favorites because it’s so easy. I usually brown the meat the night before and just store it in the refrigerator overnight so that all I have to do in the morning (they are always hectic at our house) is throw it in the crock pot and go.  We tend to eat ours with crackers.

MomDot Party: Day 4

Can you believe it? We’re already in the fourth day of the MomDot Christmas Party and the fun is just getting started.  So far we’ve learned about each other’s families, our traditions, and our shopping habits. So what’s left to talk about? One of my favorite subjects – FOOD!!!!  Today’s topic is:

What is your favorite Holiday recipe, describe your Holiday table, biggest holiday cooking disaster.

Hmm….Well I am still lucky (at least I think it’s lucky) enough to not really be in charge of the cooking when it comes to the holidays.  I’m still able to just show up to most family occasions.  I do have one food responsibility though for all family holidays – the banana pudding.  I’m not sure where all of you readers are from, but if any of you are southern girls, then you know that no holiday meal is complete without the ‘nana pudding.  I don’t think I make the best in the world, but it is pretty tasty and there’s usually none left by the end of the holidays.

No Bake Banana Pudding

Ingredients

  • 1 package instant vanilla pudding mix (5 ounce) 
  • 2 cups cold 2% milk
  • 1 can low-fat sweetened condensed milk (14 ounce) 
  • 1 tablespoon vanilla extract
  • 1 container frozen light whipped topping, thawed (16 ounce) 
  • 8 ounces of whipped cream
  • 1 package low-fat/light vanilla wafers (12 ounce) 
  • 4-8 bananas, sliced

Directions

  1. In a large mixing bowl, beat pudding mix and milk for 2 minutes.
  2. Blend in condensed milk until smooth.
  3. Stir in vanilla and fold in half of frozen whipped topping and the whipped cream.
  4. Layer wafers, bananas and pudding mixture in a glass serving bowl. (I make 2 – 3 layers)
  5. Top with remaining whipped topping and crumbled wafers.
  6. Chill until serving.

Tasty Thursday: Sausage Appetizers

Can you believe it’s already time to join in the Mommy Blogging site MomDot’s Tasty Thursday again. After last week’s complicated recipe, I decided to follow up with an easy on – Sausage Appetizers.

Ingredients:

  • 1 lb. mild sausage
  • 1 cup of shredded cheese ( I like Monterrey Jack)
  • 1/2 cup of Ranch dressing mix
  • 1 package of wonton wrappers.
Directions:
  1. Brown sausage and drain.  In large bowl, mix sausage, cheese, and dressing.
  2. Separate wrappers and place one each in miniature muffin pan. Bake 10 minutes @ 350.
  3. Spoon mixture into wraps and reheat until 5-6 minutes until cheese is melted.

Serve warm. Makes about 80.
