Sailing Along the Life of Single Parenthood

Dinner Favorite: King Ranch Chicken

This recipe was shared with me by the same friend who shared the Chicken Spaghetti recipe. Cameron is not a real big fan of this one, but I really like it a lot.

Ingredients:
1 Package Boneless, Skinless Chicken Breasts (original recipe called for a whole chicken deboned)
1 Medium Onion (chopped)
1 Bell Pepper (chopped)
1 Small Can Cream of Chicken Soup
1 Small Can Cream of Mushroom Soup
1 Can Rotel Tomatoes (we like the Mexican variety)
1/2 Stick Margarine
1 Cup Cheddar cheese
Tortillas

Instructions:

  • Bake chicken for about 20 minutes (does not need to be totally cooked. You are just giving it a head start)
  • Saute onion and bell pepper in margarine until soft, add chicken, soups and tomatoes.
  • Place small pieces of tortillas in bottom of dish.
  • Pour mixture over tortillas and then add a layer of cheese.
  • Make another layer of tortillas, soup mixture, and top with remaining cheese.
  • Cook at 350 degrees for approximately 40 minutes.

Still Looking for Father’s Day Presents

Today is the last day of school (yea!) so it’s time to really focus and find those last Father’s Day gifts for all the fathers in my life. I’ve already started purchasing stuff, but I’ve still got a few more items I need to purchase.  I’ve been brainstorming and thinking I want to find something that they will see daily and use – a constant remember of how much we love and appreciate them. Someone at lunch yesterday suggested a piece of jewelry; however, none of the fathers in my life wear jewelry, but it did give me a great idea – maybe a watch!  So I’m looking now at IWC watches. These look to be some very nice watches that I think they will really enjoy.  I’m thinking of at least picking one of these up for my grandfather. They have some timeless looking pieces that I think really fit his personality.

I think this is my favorite:

Come One Mom, Come All

lipstick to crayons blog bash

Hey Mom Bloggers, check this out.  Lipstick to Crayons is celebrating their first birthday and have invited all mom’s to join in the celebration.  And guess what? This party has presents. Lipstick to Crayons is a blog for moms by moms. It is a great site to read when you just want to escape from the hectic mom life temporary. I’ve read product reviews, entered contests, and found that I can relate to these two sisters a whole lot on some days.  Intrigued?  Check out the party details.  Be sure to look over the rest of the site too. I think you’ll find it to be a site that you bookmark and come back to over and over.

Camp Rock Just Around the Corner

Only 22 days left before Disney’s latest made for tv movie is released. “Camp Rock” will be released to the public on the weekend of June 20th. With the promotion that is going on now, is your house as anxious to see this as my 7 year old?  If so, mark your calendars and program your DVR’s. “Camp Rock” will premier on THREE channels – the Disney Channel, ABC, and ABC Family. This will make the movie available to most US homes as virtually everyone receives one of these three channels.

If you haven’t seen the previews, “Camp Rock” is the story of a summer camp for budding rock stars. The movie stars the Jonas Brothers (whose group is called Connect Three in the movie) and Demi Lovato. Demi was only able to go to the camp by agreeing to work in the kitchen. When one of the members of Connect Three (Joe Jonas) overhears her singing one night, he makes it his mission to find that voice. Check out the Disney Channel and you will see previews and music videos from the movie on a regular basis.

The soundtrack will be released just days before the movie hits the airwaves – June 17, and the movie will be available on DVD and BluRay on August 19. The Jonas Brothers and Demi will also tour together this summer.
